Ginger Iced Tea

Ginger tea is refreshing, and can be served hot or cold, all year round.

Ingredients

10 quarts of water
2 cups of sugar
2 (4 inch) pieces of fresh ginger, washed and cut into 1/4inch thick slices, peeling unneccessary.
Optional: Thinly sliced lemon or lime

1. In a large pot, pour in the water, sugar, and ginger. Stir to dissolve the sugar, and boil at over high heat. Turn the to down to a medium and simmer(cook food in liquid over gentle heat, just below the boiling point, low enough so that tiny bubbles just begin to break the surface.) for 1 hour, until the tea is reduced to 8 quarts.
2. Pour the tea out, strain, and let it cool. Serve with ice for Iced Tea. If you like, float lemon or lime pieces on top.

Note: The tea can keep up to 2 weeks in the refrigerator. Can be frozen.
