How to Make Homemade Mayonnaise
Storebought mayonnaise just isn't the same as homemade mayonnaise. Here is a basic mayonnaise recipe. You can try experimenting with different flavored oils and vinegars to create your own variations. Remember that the oils in mayonnaise aren't cooked, and it's important to use the finest quality for the best flavor.
Ingredients

Makes 1 cup.)
1 egg yolk (
different quality eggs make a big difference in mayonnaise.)
2 tablespoons of lemon juice or good white vinegar
1 cup of vegetable oil or pure olive oil
Coarse salt and freshly ground black pepper to taste
Optional: 2 tablespoons of cold water
1. In a blender or food processor, put the egg yolk and lemon juice or vinegar together. With the blender or food processor on, add the oil in a slow, steady fashion, and process/blend until the mayonnaise is thick. Add in the salt and pepper. If the mayonnaise is too thick, add in a few drops of water to thin it.
Note: This homemade mayonnaise will keep (in the refrigerator with a covered container) for 5 days.
