1. Using a sharp knife, cute each pita into 2 halp moon shapes. The cut each half moon into 3 triangle shapes. For saving time, you can stack the pitas together, and cute through the stack. Gently pull each triangle apart to separate it into 2 pieces. You should get at least 12 chips from each pita bread.
2. Preheat the oven to 375F.
3. Using a large mixing bowl, combine the oil and other ingredients, including the herbs if you are using them. Add the pitas to the mixing bowl and quickly toss to coat them. Remove and lay them out on baking sheets.
4. Bake the pitas in the oven for approx. 7 minutes until the pitas begin to colour. Remove from the oven and turn the pitas over with a metal spatula. Return to the oven and bake another 5 minuters, until the chips are a golden brown colour and crispy. Remove from the oven and let it cool. Store them in and airtight containers or Ziplock bag.
